The Auberge des Montagnes

Some of the chefs in Auvergne have got together to form an association called the “Toques d’Auvergne”, placing special emphasis on the importance of “Flavour First”! These talented chefs all share the same passion for their job and Auvergne specialities. Their style of cooking displays a clear love of local dishes while also incorporating a modern twist and encouraging sustainable forms of consumption by particularly favouring sourcing directly from farms and producers and the use of local produce. Look out for the famous “Toques d’Auvergne” sign and spread the word!

The Bel Horizon

Eric Bouyssou is the Head Chef at the Bel Horizon restaurant in Vic sur Cère and is part of the “Toques d’Auvergne” group. His cooking is focussed around local produce, one of his specialities being a recipe with Fario trout, sourced locally at the Ganel fish farm in Polminhac run by Noël Vazelle.
